Chocolate Chip Biscotti



Biscotti is a definite fave of mine..I try to make it different everytime, and then I freeze it and take out a nice crispy piece to go with a cup of tea..

Basic Receipe:

Preheat oven to 350 degrees. This is a flexible receipe, you can vary the flours, and feel free to throw in whatever you have such as cranberries, dried cherries, flax, any kind of nut...

1 1/2 cup brown rice flour
1/2 cup almond flour or cornmeal or corn flour (or a mixture of both)
6 tbsp tapioca starch
4 tbsp cornstarch
1 1/2 tsp xanthan gum
1 tsp baking powder
pinch of salt
3 eggs
1/2 cup brown sugar
1 tsp vanilla
1/2 cup nuts walnuts almonds or pecans
1/2 cup chocolate chips
tbsp flax seed

In a medium bowl combine all dry ingredients. In another medium bowl beat eggs with sugar and vanilla until combined. Stir into dry ingredients. Grease a large pan. Spread the batter out to form a log. Bake approx. 25-30 minutes until it looks a golden color. Let cool for a couple minutes, then cut into pieces on a cutting board. Put back onto pan cut sides facing up and bake another 15 minutes.
